Leeks and Eggs

Alan's Challenge 


Today was pay day. We woke up a little hungover after one too many ciders in the office last night. A beautiful day not a cloud in the sky. Alan has decided to start the 'Year in Eggs' challenge with 'Baked Eggs with Creamy Leeks'




Ingredients
15g butter
225g leeks
100ml creme fresh
ground nutmeg
4x eggs
chopped fresh parsley
salt and pepper

1. Pre-heat oven to Gas 5, butter the base of the baking tray.

2. Melt butter in the frying pan and cook leeks until soft (not brown)

3. Add 45ml of cream and cook for 5 minutes until leeks are very soft and cream has thickened a little. Season with salt, pepper and nutmeg

4. Place Leeks in a baking tray. Arrange eggs on top and pour the remaining cream on top

5. Bake for twenty minutes

Yum Yum: creamy leek eggs with lashings of tea

Hannah- The egg yolks were a little hard for my liking a softer egg next time please.

All in all a brave first effort.
