Happy Diwali. I thought I would post you the above little treat as it's one of my bollywood favourites.
To celebrate Diwali I made the below menu
Ekoori Eggs
Garlic Greens
Paratha
Masala Chai
I even bought new metal plates and small little chai glasses to mark the occasion. All recipes came from my little Madhur Jaffrey book.
Ekoori Eggs
1x small onion
1x teaspoon grated ginger
1x chopped fresh chilli
1x tablespoon very finely chopped corriander
1/2 teaspoon of turmeric
1/2 teaspoon of ground cumin seeds
1 tomato
4x eggs
salt and pepper
1. Melt butter in a frying pan, and saute the onion until soft
2. Add ginger, chilli, fresh coriander, turmeric, cumin and tomatoes cook for 3-4 minutes
3. Beat eggs and add them to the pan. Cook the scrambled eggs to the desired consistency.
We made garlic greens and Parathas to accompany the eggs. We also made Masala chai which we drank out of little glasses and the whole experience made me want to go back to India.
Masala chai (serves 2)
1 pint of water
1x stick cinnamon
8 cardamom pods
8 cloves
175ml milk
6 teaspoons sugar( we only used 3)
3 teaspoons sugar (we used 4)
1. Pour water in a saucepan add the cinamon, cardamom and cloves and bring to the boil
2. Cover, turn heat low and simmer for 10 mins.
3. Add the milk and sugar and bring to a simmer again.
4. Throw in the tea leaves, cover and turn off the heat
5. After 2 minutes, strain the tea into two cups and serve immediately

I really enjoyed this dish. Alan was recovering from a cold so felt he could not taste the meal as much as he usually does.
